Sprint Triathlon Overview




As many of you know, on Sunday I completed my first sprint triathlon: the Trek Women Series Sprint Triathlon at Buckeye Lake. Brittany invited me to participate and I'm glad I did, it was a great experience! The sprint consisted of a 1/2 mile swim, 12 mile bike and 3.1 mile run. We started and ended in the water, swimming to start and thanks to a downpour, a very wet run. Here's the breakdowns:

Here's my take on the whole thing:
1. When I look at the break down my first thought is OH MY GOSH, a 8:50 run pace (um, I'm a 10 minute miler...have been for years so this is super fast for me). Granted I wasn't running a marathon or a 1/2, just three miles but still....I'M NEVER THAT FAST (must have been the rain).
2. I would definitely do it again, so fun! (Thanks Brittany for inviting me)
3. The swim was the scariest part but once I got into the water and away from the other swimmers, I felt much better.
4. It was nice to do something other than run miles and miles and I've enjoyed getting back to biking and swimming.

Overall a very positive experience and I would recommend it to anyone!

Hot, Hot, Hot

It's been hot here, way too hot to turn on the oven so Chris and I made pizza on the grill this week. It was a success!

Berry Meringue Nests




Perfect summer time dessert:

Preheat oven to 350 degrees.
Beat 4 egg whites (room temp), 1 tsp cream of tartar and 1/2 tsp vanilla with a mixer until soft peaks form. Still beating, add 1/2 cup sugar, 1 tbs at a time until stiff peaks form. Spoon out into nest shapes on parchment paper lined cookie sheet (I made 6 or you could make one large one). Bake meringue for 35 minutes, then turn off oven, leaving meringue inside to rest with the door closed for 1 hour. DO NOT PEAK!

Once cooled, place assorted berries in cooled shell and top with whipped cream if desired. Yummy!

Slowly but surely we are checking projects off the list. Next up, waterproofing the basement!

4th of July!

We didn't take too many photos 4th of July weekend, we were too busy having FUN at Lake Erie. We spent most of the weekend hanging out on the water with my parents and some of their friends, Tom and Debbie. They were so generous in letting us stay at their lake cottage and allowing us to play with their fun fun toys :) We came back on Monday to spend time with Steve, Sharon and Co. for a family meal and yard games...all in all a GREAT weekend!
